Seeds are crushed using heat and chemical solvents (commonly hexane) to extract every last drop of oil. What’s left is then bleached, deodorized, and heated to high temperatures to strip out color, smell, and “impurities.” The result is a neutral-tasting, long-shelf-life oil — but that neutral taste comes at a price. High heat and chemical processing destroy many of the natural nutrients, antioxidants, and flavor compounds that were present in the original seed.

How Cold-Pressed Oil Is Made

Cold-pressed oil is extracted mechanically, using a press (often a traditional wooden “ghani” or a modern expeller) that crushes seeds without added heat or chemicals. Temperatures typically stay below 40°C hence “cold” pressed. Because there’s no chemical extraction and minimal heat, the oil retains natural nutrients (vitamins, antioxidants, healthy fatty acids), authentic flavor and aroma, and a natural color often slightly cloudy or golden, rather than perfectly clear.

Does It Actually Matter for Your Health?

Yes, in a few concrete ways. Cold pressing preserves more Vitamin E, polyphenols, and antioxidants, several of which are damaged or lost at the high temperatures refining requires. Refined oils can carry trace residues from the chemical extraction process cold pressed oils skip that step entirely. Repeated high heat processing can also alter fat molecules, so cold pressed oils stay closer to their natural fat structure.

What About Taste and Cooking?

This is where people notice the difference immediately. Cold-pressed groundnut oil actually tastes nutty. Cold-pressed sesame oil smells like sesame. Refined versions of the same oils are often almost flavorless by design which works for some recipes, but strips away the character that traditional Indian cooking relies on.

The Trade-Off

Cold-pressed oil isn’t perfect for everything. It costs more to produce, has a shorter shelf life, and can have a lower smoke point than some refined oils meaning it’s not always the best choice for very high heat deep frying. For everyday cooking, sautéing, tempering, and finishing dishes, though, it’s generally the more nutritious and more flavorful choice.

Walk down any supermarket aisle and you’ll see dozens of cooking oil bottles some labeled “refined,” others “cold-pressed” or “wood-pressed.” […]

[1

post-8","post","type-post","status-publish","format-standard","hentry","category-blog
["GET
